The most famous is certainly the sparkling version, which is divided in turn into Brut, Extra Dry and Dry depending on the sugar content, ranging from 0 to 12 g / l for the version Brut, from 12 to 17 g /l for Extra Dry version, and finally from 17 to 32 g / l for the Dry version. The peculiar prosecco’s sparkling is obtained by fermentation in the bottle, also known as sur lie, thus following the traditional method used by the producers of a time to get the bubbles. Nowadays, however, most of the sparkling prosecco is obtained using the Italian method (Charmat Method) in an autoclave, called prosecco wine DOCG method. Finally we find the Wine prosecco docg quiet, less known and widespread, is obtained from the thicker and less productive prosecco vine, where the grapes are fully ripe.
